In a food processor, combine 1/2 lb tomatillos (peeled and washed), half a bunch of cilantro, and 1/2 onion into a coarse blend (you can also add as much jalepeno as you like here. I don't usually add jalepeno). Season with salt (1/2 tsp?) and lime juice (1 TBS) and stir in 2 sliced green onions and a chopped avocado. You can also add a chopped mango if you want. Serve on everything. ;)

The best way to peel the Tomatillos is to boil them till the skin cracks. makes life easier. It would be like if you were going to can them.

Im guessing with out the skin? SO peeled works.
hm . . . I always leave the skin on, but I take the husk off and then the skin is sticky so I just wash it. i think if I had to peel them I'd never make this and that would be a shame.
lol peeling is so fast though. Just boil the water and throw them in and they almost take 5 sec for the skin to crack then you peel it off. lol I could not think about what you meant about husk. But I know what you mean.
I only "dehusk" the tomatillos- I'm hoping the skin has lots of vitamins!
