Favorite Cornbread

No eggs needed for this moist bread. It also works well with gluten free rice or bean flour mixes

¼ cup butter, melted
¼ cup unsweetened applesauce
3/4 cup sugar
1 cup buttermilk
½ tsp baking soda
1 cup flour
1 cup cornmeal
½ tsp salt

Preheat oven to 375.
Combine wet ingredients and soda. Stir in flour, cornmeal and salt until just blended. Pour into muffin tins and bake 20-25 minutes until a toothpick comes out clean.

i'll have to give it a try, we love cornbread. i just wish it was a little less messy...the kids seems to get it everywhere.

Reebs! I know this is WAY overdue, but I was looking for a nice cornbread recipe. You remember how much I LOVE cornbread right? You used to bring me back some from the Cannon Center? Ahhh, those were the days! Miss you! Say hi to Chris for me!
